After each stage — withering, rolling, fixation — we combine moisture testing with hands-on assessment of the leaves’ appearance, texture and aroma. They move on only when they meet the requirement for the next stage. Timing varies with the moisture and condition of each harvest. Three to five minutes. Best served hot. Re-infuse the same leaf a second and third time, adding a minute to each.
